Kale – Shining a Light on a Humble Superfood

Kale is an amazing superfood leafy green, packing the punch of so many nutritional benefits in a tasty and versatile plant! As part of the cabbage family, it is a cruciferous vegetable. Varieties of kale include green and purple kale, with smooth or curly leaves.

 

Kale is full of anti-oxidants such as vitamin C & beta carotene along with anti-inflammatory flavanoids and polyphenols. These all contribute to targeting harmful free radical cells from foods and environmental surroundings and helping to reduce inflammation in the body.

In terms of inflammation reduction, flavanoids and polyphenols which are ample in kale can also help the health of our cardiovascular systems, mental health and suppor our immune systems.

Given that kale is very high in vitamin C, it supports healing and immunity in the body alongside supporting the protein collagen. When consumed daily in raw form, it can help to balance healthy and unhealthy cholesterol levels.

Vitamin K is also in abundance in raw kale which supports healthy circulatory systems, alongside the compounds Lutein and Zeaxanthin which support healthy eyesight!

From baking, steaming and eating raw in salads or smoothies, its very easy to incorporate this powerful green into our diets! Our favourite way is to add it to a protein smoothie for added fuel & healthy nutrients!
